LOUISIANA CHICKEN

A 21/2 to 3 pound chicken, cut into 8 serving pieces
1/2 teaspoon salt
1/2 teaspoon ground hot red pepper
1/2 cup vegetable oil
4 tablespoons butter
3/4  pound fresh mushrooms, trimmed, wiped with a dampened cloth
1/4 cup flour
2 cups chicken stock, fresh or canned
1/4 cup thinly sliced pited green olives
1/4 cup dry sherry
A 10-ounce package frozen artichoke hearts, freshly cooked

Season chicken with salt and red pepper. Heat oil and fry chicken (about 20 minutes).
In a seperate skillet, melt butter, add mushrooms and stirring occasionally, cook 5 minutes.  Do not let the mushrooms brown.

Place chicken on platter.  Pour off all but about 4 tablespoons of the fat remaining in the skillet and in its place add the flour; mix well.  Stirring with wire whisk, pour in the chicken stock in a slow, thin stream adn cook over high heat until the sauce comes to a boil, thicken heavily and is smooth.  Reduce the heat to a low and simmer for 2 to 3 minutes to remove the raw taste of the flour.

Stir in teh mushrooms, olives, sherry and artichoke hearts, and simmer for a minute or so longer to heat them through.  Ladle the sauce and vegetables over the chicken and serve at once.

MISSISSIPPI MUD PIE

6 oz. graham crackers
large knob of butter, melted
4 oz plain chocolate, melted
5 cups coffee ice cream
2 pt chocolate ice cream
2 Tbsp Tia Maria
2 Tbsp brandy

Crush the cookies in a food processor or a plastic bag with a rolling pin.
Stir in butter and chocolate and mix well together.
Press the crumbs firmly and evenly over the bottom and sides of a greased 9 in pan.  Chill
Allow the ice cram to soften slightly .
Put in a bowl and add the Tia Maria and brandy.  Blend well together.
Spoon the ice cream into the chocolate case and put in the freeze until solid.
Remove the pie afrom the freezer about 15 minutes before serving.  Decorate with whipped cream and grated Chocolate.
