Show 17: Les Heard Prepares Andrea's Angle Hair Pasta with Salmon

ANDREA'S ANGLE HAIR PASTA WITH SALMON

INGREDIENTS

2 tbsps butter
1 cup chopped onion
1-1 1/2 tsp chopped garlic
Approx 8 oz. Smoked salmon, cut into strips
1/2 cup 100 proof vodka
1/2 cup dry white wine
1/2 -1 cup fish stock
2 cups whipping cream
salt and pepper to taste
1 lb angel hair pasta
2 oz jar black or red caviar ( 1 use Romanoff black lumpfish) 

Heat butter until it bubbles.  In it saute the onions and garlic until translucent.  Add salmon and saute until the color changes to a pale orange.

Pour in the vodka and carefully flame it.  When flames die out, remove pan contents and keep warm.

Without cleaning the pan, add the wine and fish stock and bring to a boil.  Add the cream and reduce the sauce over medium lowheat by about half.

Add salmon nixture and return to a simmer.  Taste sauce and add salt and pepper as needed.  ( Some salmon is quite salty already)

Meanwhile cook the pasta al dente.  Remember that angel hair cooks very quickly - a minute or two is enough.  Drain the pasta well.

PRESENTATION

Serve the pasta with sauce on top.  Place a small dollopofcaviar on each serving.  Serve with side salad and/or green vegetable and crispy bread.

Serves 4 adults with great leftovers
